Ingredients

4 people
  1. 1onion, diced
  2. pinchchilli flakes, optional
  3. 2garlic cloves, minced
  4. 500 gparsnips, peeled and diced
  5. 1medium sized potato
  6. 1 litrevegetable stock
  7. 1 tablespoonhoney
  8. salt and pepper, for seasoning

Cooking Instructions

  1. 1

    Put a drizzle of olive oil in a large pan over a medium heat
    Add the onions, chilli flakes and garlic and sauté for 5 minutes

  2. 2

    Stir in the potato, parsnips, stock and honey
    Bring to the boil and simmer for 25 minutes or until the vegetables are tender

  3. 3

    Season with salt and pepper
    Blend until smooth
