Spiced Leek, Potato and Parsnip Soup

My mum makes leek and potato soup all the time, I adapted her recipe, adding parsnips because we had some left in the fridge.

Cooking Instructions

Peel and chop the potatoes and parsnips, boil in a pan of water. Add the stock and spices to make a broth. Boil for 5-10 mins.

Dice the chilli. Chop the leek and onion, fry with butter or oil until soft with the red chilli.

Add the leek and onion to the potatoes and parsnip. Add the soy sauce (soy sauce introduces a depth of flavour to savoury dishes.)

Simmer on a low heat for another 10 mins. Add the lemon juice, flour, salt and pepper and milk.

Let cool for 5 minutes, then blend the ingredients until they are smooth.

Thai Spiced Veg Soup
I was away for three days over the weekend visiting my family in Northumberland. While I was away, my husband (left at home with the children), managed not to cook a single vegetable - not even an onion! As a result I have a lot of veg that needed using up. A laksa-like spicy red curry soup that is perfect for colder days. Garnished generously with bean sprouts and fried shallots and red chilli's. Freeze or store in the fridge for up to 3 days (store noodles and soup separately). Add an extra can of coconut milk for a less spicy soup.

Tom K̄hing H̄ĕd – spicy oyster ‘shroom soup
The Thai word for ‘boil’, tom (pronounced dtome) features prominently on Thai menus and tom yum goong (sweet and spicy broth with prawns) is probably one of the most famous dishes.Tom kha gai (boil galangal chicken) is probably Thailand’s second most famous soup. It dates back to around 1890 and was originally called Tom kha pet as it featured duck and galangal in a coconut milk-based curry.Tom kha gai is flavoured with fragrant kaffir lime leaves, lemongrass, coriander and lime juice along with hot chilli which balances the creamy coconut milk. Instead of chicken, I have used miso and oyster mushrooms and replaced the galangal with ginger, so it’s more of a Tom K̄hing H̄ĕd (boil ginger mushroom).The oyster mushroom is widespread in many temperate and subtropical forests throughout the world but was first cultivated commercially in Germany as a subsistence measure during World War I. It is common throughout UK’s woodlands and grows all year round. It is a delicate mushroom with fan-like gills and ideal for this recipe as it doesn’t need much cooking.I was going to say that this recipe is vegan but, on hindsight, I don’t think I can as an oyster mushroom is a carnivore. In order to obtain the nitrogen it needs, it secretes a powerful toxin that stuns passing microscopic nematode worms then its sprawling fibres enter the worms in order to suck out their guts!Variations are a plenty; add prawns, egg or pak choi to this delicious Thai broth. #GoldenApron23

As part of Cookpad’s new Monday feature today they have made my Uncle John’s easy but delicious sweet corn soup! Made from all store cupboard ingredients this is definitely a winner especially at the moment with us not always getting to the shops! Home made soup is always 100 times better than shop bought and cheaper too!I’ve adapted the recipe as I know John won’t mind, and a fact is John A isn’t my Uncle, which I’ve always called him, he’s my God Father! He has over 130 recipes on here now, I can’t believe how many he’s made since I suggested he join Cookpad in the first lockdown! All his recipes are about using up all the ingredients you have, no waste, delicious home cooked food!I’m on a really tight budget so I used the controversial Spam, dry fried to top the soup! Tbh I never used to like it, but I think the recipe has much improved since the 70’s, well I think so it says pure meat on the tin. Anyhow souper 😂 speedy and delicious!
