In a grinder jar add raisins and dates and make a fine paste. Remove and set aside.
Grind the nuts coarsely and add desiccated coconut to it and mix well.
In a pan add 1 tablespoon ghee and roast the nuts on low heat for 2 minutes. - 2
Add poppyseeds, cardamom powder and rose petals. Cook for a further minute. Spread the nuts side ways and add a tablespoon of ghee in the middle. Add the puréed paste and mix the nuts until combined. Cook for a minutes and transfer in a greased plate and let it cool. Grease a Modak mould and make Modak. Ready to serve lord Ganesh.

Quick & Easy Toffee with Nuts
The other day, when I was making Caramel to make ‘Coffee Creme Caramel’, I realised that I could make ‘Almond Toffee’ much easier. I usually cook Butter and Sugar together until the mixture turns brown, but I could cook just Sugar first, then add Butter and Almonds. I tried to make ‘Almond Toffee’ in that way and the result was almost the same. It was easier and quicker. Today I used Roasted Walnuts instead of Almonds, and it was also delicious. You might wish to double this recipe, but I recommend not to make a lot because this Toffee is actually quite dangerous. High in calories and very hard to stop eating it.

Basil & Pine Nuts Miso Pesto
If you can’t have any ingredients, use alternatives! That’s how I have been inventing new food. When I tried to make ‘Shiso’ flavoured miso paste and couldn’t find 'Shiso', I used fresh Basil leaves. Thinking of ‘Pesto Genovese’, I used Pine Nuts instead of Walnuts. OMG!!! Miso, Basil and Pine Nuts created a new flavour. What would you use this paste for?
