Naan bread
We decided to cook a family curry on Friday night as felt we deserved a treat at the end of week 2 of lockdown. So, obviously the family really wanted naan bread to go with our sumptuous butter chicken. Hence this recipe! It was so lovely - we made 2 large ones and they all went within minutes! It is a slightly more time consuming recipe compared with some of the more basic recipes out there (which are also great) but, as we have time for dough proving at the moment, we thought we'd go all out!

Mandasi (Fried Bread)
Every Malawian child grew up eating mandasi-If not then I do not know what you did with your childhood lol. They are a delightful snack enjoyed with a hot drink if you are going to enjoy them in the comfort of your home, but they are commonly a street food you just get on the go! FYI, school teabreaks were heaven with these 👌What I love about mandasi is the ease of customization. You can leaven them with either yeast or baking powder depending on how soft you intend them to be. And they can be flavoured with spices, fruits and vegetables i.e. bananas, lemon, pumpkin, cinnamon, etc but the locals like them as is.Other names: doughnuts; puff-puff; maandazi; fritters; beignets; and the list goes on....#MyCookbook

Frying Pan Plain Flour Bread

Ciabatta type 'no-knead' bread
Local supermarket introduced a part-baked Ciabatta bread, which became favoured for hearty breakfast sandwiches, and then suddenly stopped offering. So i went looking, and stumbled into the focaccia recipe from "The Tasteless Baker", which when spread thin in bread pans gave us an decent alternative to the sandwich bread. Not sure if its closer to ciabatta or focaccia, or neither (not tried either in Italy...) but easy labouring and decent result.
