Ingredients

  1. 3/4 cupDates (finelly chopped pitted dates)
  2. 1/3 cupwater Boiling
  3. 1/2 tspBicarbonate of soda
  4. 1/2 tspBaking powder
  5. 1/4 cupMaple syrup
  6. 90 gmButter ,  softened
  7. 1/3 packedbrown sugar Firmly   cup
  8. 2Eggs
  9. 1 cupPlain flour

Cooking Instructions

    Preheat the  oven to 180°, grease and line a loaf tin.

  2. 2

    Sift the flour and baking powder in to bowl.

  3. 3

    Combine dates and boiling water in a small bowl. Stir bicarbonate of soda; stand 5 minutes. Stir in maple syrup.

    Meanwhile, beat butter and sugar until light and fluffy. Add eggs, one at a time, beating until just combined between each addition.

  5. 5

    Add butter mixture into the date mixture and stir in sifted flour.

  6. 6

    Spread the mixture into tin and bake about 50 minutes. Stand loaf in tin for 10 minutes and turn on to a wire rack to cool.

    Maple syrup:- Distilled from the sap of maple trees found only in Canada and North America.

Though I have learnt the ways and tricks of cooking through the Home Science course attended before marriage, it became a passion and excitement for me much later.
