Ingredients

  1. 285 gramplain flour
  2. 1 teaspoonbicarbonate of soda
  3. 2 teaspoonegg replacer
  4. 1/2 teaspoonsalt
  5. 1 teaspoonchia seeds
  6. 110 grambutter
  7. 225 gramcaster sugar
  8. 5ripe bananas, mashed
  9. 85 mlbuttermilk
  10. 1 teaspoonlemon juice
  11. 1 sachetlemon zest
  12. 1 teaspoonvanilla extract
  13. 1 teaspoonchopped pistachios for garnishing

Cooking Instructions

    Sift the flour, bicarbonate of soda and salt in a mixing bowl.
    Cream the butter and sugar until light and fluffy in a separate bowl.
    In a bowl take egg replacer and add water and make a paste.

    Add buttermilk, vanilla extract, lemon zest, egg replacer and mashed bananas to the sugar and butter mixture. Fold in the flour.

    Grease a loaf tin and pour the cake mixture into the tin and garnish with chopped pistachios and bake for about 50 minutes. It all depends on the oven or cook until golden brown.

    Remove from the oven and let it cool in the tin before turning it out on wire rack.
    To be served when cooled.
