Yes, you can leave it out. But, it's a great idea to have a bottle of Sake in your kitchen. I don't buy very good quality Sake as I would drink it. Cooking Sake is just good enough.

Yes, see Step 2. Combine Mirin, Soy Sauce and Sugar to make 'Tare' sauce. 'Tare' is a Japanese term for the sauces often used in grilling ingredients.

Most Asian grocery stores sell it, in Japanese food section. There are quite a few Chinese or Korean shops around Ringwood area, and all them sell Shichimi.

Having said that, what do you suggest as an alternative? I notice that shichimi has dried orange peel in it. I have szechuan seasoning and thought about drizzling a bit of orange juice.
