Does this sub directly for AP? I would guess to treat it more like whole wheat flour. Anything its particularly well-suited for?

Yes, use this as you would whole wheat flour. For most recipes use a 50-50 whole wheat and AP mixture.

Awesome, what brand did you get? They are bit expensive. Not sure if I should go the hand-crank route, or electric, or I have a kitchenaid, so the grain mill attachment maybe. I've also read that polenta is particularly good when you mill your own corn.

it's is still by far the best on market ---wonder mill. $239 including shipping. All whole grains have to be "fermented" in order to get maximum nutrition out of them. soaking, sprouting, sourdough fermenting all work. I am reaching an interesting book called cooked by Michael pollen. highly recommended

Oh, that book must be the basis for the Netflix series. Have you seen it? It's pretty good.

Actually the opposite, I watched the documentary first from Netflix, then read the book. Worth reading the book.
