Haha! Yeah I was also a bit scared, but turns out not many baddies can live in it because of the pH

We’ve been making it regularly for the past 6 months or so, it works well! Give it a go 🙂

It undergoes a kind-of secondary in the bottles anyway. Almost always fizzy after a few days.

How much should I pay attention to which scoby to buy? Where did you buy it?

I got mine from eBay. I think the size is the biggest consideration, but it doesn’t matter too much. I can send you some of mine if you want 🙂 (I got a new one)

Good question. You save back approx 200ml of the old batch, and add the 200g sugar, so ~2 litres.
