Oo, I love this again Laura, your recipes are so creative! I’m wondering if it’s a bit too ambitious to recreate this out of aqua faba? 🤔🤣

Well the cream will probably be ok as it includes a setting agent so agar agar or vegi gel will be fine. The first time I made the rocks, they collapsed but that doesn’t matter as crumbled they will be more like sand than rocks. Would be fab to know if it works 🤞🏻

Takk. I love Iceland, it’s so unique and the most beautiful island I have ever visited. I have been twice; visiting south and west and then drove around the island from the south west via south and east to the north and back down through the middle. Always happy to try Icelandic recipes so please I would love you to share any with me. This particular recipe I ate in a restaurant in a harbour in the north of Iceland. Tried endless times to make it and failed but I reached out to the chef and he kindly sent me the recipe which I have adapted for home making. Skál.

Me too I’ve just started following you and now craving your lamb soup. Oh heavens above, the lamb and fish such as arctic char in Iceland are truly amazing and I’m not sure if I could possibly replicate the flavours here.
