I don't have a cake tin or a loaf tin. Would a square casserole dish be suitable to bake the banana loaf in?

I'm sure it will Sarah, I am not too sure on the changed cooking times, I would recommend you keep an eye on it when baking

Sally, is the oven temperature of 160 for a fan oven or not? My last cake I reduced the temp by 20 degrees for a fab oven but it took an extra half hour to cook which made me wonder. Thanks :)

I made it yesterday and reduced the temperature again 🤦🏻♀️ consequently it needed a lot longer and browned off a little but it’s delicious none the less, thanks Sally, I’ll know next time 😊
