Annie's Instant Pot Mac n cheese

Franci Henderson @cook_15837578
I have made this one of my lazy dinners when I am feeling crappy and do not want to cook. I add canned tuna, mixed veggies and shredded cheese to ours for easy tuna casserole, heh. Thank you so much for parsing out the water amounts for the Annie's Mac & Cheese. I had previously tried one for Kraft but adjusted the water for Annie's smaller boxes. But I only buy Annie's so I was so happy to find someone had already figured out the perfect amounts.

I followed these directions while multiplying the ingredients to make 4 boxes at at once in my IP Duo, and 8 boxes at a time in my. IP Duo80. I vent-released the steam on the IP Duo after 8 minutes and it releases steam like normal and turned out just fine. I vent-released the IP Duo80 and zero steam came out, and the valve remained in the UP position , but the machine opened just fine and the 8 boxes had cooked up perfectly..I mixed all the cooked Mac & Cheese together and served it at a potluck and it was great!

Yeah, I always multiply everything and make two boxes at a time. This kind of tuna casserole is the only type my kids have ever had too.

Do you know how this scales up, if I want to make 2 or 3 boxes at a time? Can I just double the water/milk/butter, and does the cooking time change?

Personally, I cook with a triple pot-in-pot apparatus, so I can cook exactly what the recipe says without having to worry about too much liquid ingredients. That being said, as long as all the ingredients are mixed prior to insertion, I think you can simply multiply by however many servings and it should still come out okay.

YUP. I just double everything whenever I make it because one box does not make enough for four...unless it is just a side dish.

Def just double all the ingredients to scale it up @James Cleveland. I do this ALL the time and it comes out great. Tonight I added a packet of taco seasoning, used unsalted broth for the water, then when it was cooked, added more cheese, a can of (drained) great northern beans (would have used pinto if I had them), a (drained) can of corn and some salsa. TACO MAC!
