I have a couple of questions regarding ingredients. Will chilli flakes be ok to substitute the 10 bird’s eye green chili? And for the umami seasoning, could I use dashi seasoning?

chili flakes are no good substitution! we'll need a fresh chili to make it work. red chili is fine too! the mixture of the fresh chili with the oil is what makes it yummm!umami is replaceable with dashi indeed!
