You can. Just double the rest of the ingredients as you like. Same times for meat. 75 for pints and 90 for qts. Make sure to use the pressure for your altitude.

Have you ever bought something in a can that contained rice? Me too! My favorite soup has regular AND wild rice in it. It's safe to can rice.
"They" don't recommend it because they haven't tested it and given it their stamp of approval. However, people who have been canning for 30+ years HAVE done it a thousand times and they do give it their stamp of approval. Check out "rebel canner" groups for more information.

I would advise cutting the beans and rice in half use a half of cup of onions and peppers double the taco seasoning ive used chicken in place of beef too

This looks yummy, but if pressure canning, omit the rice and add cooked rice when heating your meal to eat. Rice cannot be safely pressure canned.
