I found 'japanese sushi rice' here in UK. Is it the same as 'cooked rice' as stated here? What is the everyday rice in Japan? Is it sticky like sushi rice? @junko @auntyeiko

@malouherkes In Italy, I buy what's branded as 'Japanese sushi rice' but back home in Japan, there's nothing like 'sushi rice' -- we use locally-grown japonica rice daily (as in ' cooked rice' in @auntyeiko's recipe here), and also for specialty dishes like sushi. Japonica is a rice variety that's widely grown in East Asia. Grains are rounder, thicker, harder and somewhat sticky. When we make mochi, we use glutinous rice that's even stickier. Sorry for the information overload, my grandfather cultivated rice and I myself used to be working at a rice business startup in Africa, I have a lot to say about rice 😂

Thank you @malouherkes for opening my recipes. In Japan and Japanese language Sushi rice means cooked rice season with vinegar, sugar and salt. But I know rice means both rice and cooked rice in English language. @junko thank you so much for explaining about Japanese rice. ( my English is poor….) I know in most of the countries they call japonica rice Sushi rice. It was surprising for me.

Thank you @junko @auntyeiko for this! I just found an amazing Asian supermarket next to my house and discovered many types of sushi rice. But have never heard of the term japonica. I will explore more. I have bought lots of Japanese ingredients to cook this week 😊

Yay, enjoy exploring! Let me know if you need anything from me 👍 Japonica is a rice variety name and it's probably not specified on the package. The most certain approach is to buy rice made in Japan (but usually very expensive abroad) or ask for advice from one of our Japanese colleagues in Bristol 😆 Maybe @search can help!
