Underrated recipe. This should have more comments and ratings, because this is hands-down perfect. The eggplant is a melt in the mouth delight with the pork fat. Although I do suggest that it's better with lots of green onion (instead of just a garnish), this will be my go to recipe if ever we have a surplus of pork and eggplant at home. Amazing dish :)
