waaaaaaaayyyyyyyy too salty!!!! if you use bacon don't use salt! I used half of the salt in the recipe and it was still very strong even without bacon. plenty of salts come from the butter and cheese. saying that, it is very tasty with a few adjustments. [ok]

The first time I made these it was for a bbq, I followed step 11. Everyone loved them, even my non- meat eating friends. One thing I do is steam the potatoes with skins on. this keep the nutrients in the potato, plus the skins rub right off. Then I put them through a potato ricer (saves my shoulder) Thanksgiving I used 8lbs of taters and adjusted the recipe accordingly. Yum Yum ~(o.o)~

I left out the salt altogether. My husband, who adds salt to everything (even if it's already seasoned) said it didn't need it. Salt is always optional in any recipe. Give this one a try without salt.

I'm giving it two stars because it's mashed potatoes with cream cheese and bacon. booring, be creative. like your description of the dish. instead of placing the bacon in the top, cook the bacon till crisp and use it as a crust. then use diced ham into the mashed potato filling. top it with bacon sharp cheddar and pepper jack cheese and garnish with jalapenos and then serve. Wow! I doubled the recipe for five critical, I mean food critic type of critical freeloaders.....not a morsel left. Well the name says it all. These potatoes are radical. And they are very easy to modify to your liking. We've added panko crumbs to the top for a crunch and done chunks of our favorite ham. Also we've added chucks of beef and peas for an easy take on sheppards pie. :beer
