Thanks Ifeoma 😊. I just used a cheap tonic as they all have the same flavour. I grabbed a bottle of Tanqueray Export Strength as it was the nearest on the sideboard but any London Gin I find is good. I did try using Opihr once but it’s an acquired taste and made the cupcakes taste like violet sweets 😑. The gin is subtle but if you want a real alcoholic kick in anything, add Wray Nephew Jamaican rum 🚀.. which reminds me I need to put up a recipe for Long Island Iced tea cakes 😁😵💫

Any supermarket tonic but not slimline. I used the Lidl one as it is cheap and has a nice citrus tang.
