An egg sandwich is the best kind of sandwich 👌🏽 I put my own little twist on this lovely recipe, by using what I had on hand. I used Avocado mashed up to spread generously on to the slice of toasted bread, and layered with the juiciest, ripest delicious tomato, and of course topped with the crispiest fried egg! 👌🏽This was brunch as suggested by your recipe! :) Thank you for the inspiration Taye! This brunch sandwich was out of this world delicious!
