I was going to try your recipe, but I couldn’t find lesser galangal here in the UK. What exactly is lesser galangal? 😥

Hi dear , you can make it without laser galangal . If you’d like, you can add a little ginger for warmth and aroma, and increase the turmeric and galangal to keep the flavors rich. The basic spice mix of shallots, garlic, chili, candlenuts, coriander, turmeric, galangal, shrimp paste, and kaffir lime leaves will still create a delicious betutu. 😊
