It is the hard fatty substance made when rendering fat. They use it to make very cheap candles that melt quickly even without being lit on a very hot day. It is edible its can be softened from the warmth of your hands.

You can omit the tallow especially if you are going to eat the jerky right away

If you do make it it would have to be from beef, mutton, buffalo, or most animals like that. However pork when you render it, it will be called lard.
