passover is a holiday celebrating our freedom from slavery in Egypt. The jews left in such a hurry that they didnt have time for their bread to bake so it baked as flat cakes on their backs as they left. to remember this, we remove all leaven from our possesion, also representing ego, for the eight days of the passaover holiday. so we kashered and covered our kitchen to make sure our pesach food wont come in contact with leaven.

tzimmis is a yiddish word for stew. there are many different ways people make it.. this is how we like it in my family :) enjoy it! we also added in some crushed pineapple which gave it great flavor! you could add baked apples as well if you like. (i guess pretty much anything will make it good ;))
