Great recipe. I’ve never heard of Mexican chive bulbs. By the looks of your pic I’m guessing they are what we know as large spring onions.

You are right. Chives dont have bulbs, they have rhizomes. Our farmers market sells these as mexican chives or mexican onions because they have a sweet garlicky taste, and the bulbs are several times larger than spring onions.
