Looks nice, I love spelt :) What is grape malass by the way? I tried looking it up but couldn't find anything.

Hi Felice, sorry it was typo. It should be grape molasses, a whole food form of sugar that keeps all nutrients of grape. You do not have to use it if you do not have it at home. Oh one more thing, do you let the dough ride for a while after step 2, or step 3?

Yes, anywhere between 4 hours to overnight. Since I was using homemade starter, the hours various. It depends on how active your stater is, room temperature and etc. The longer you let it sit, the tangy it tastes and easier on digestion.

i doubt yeast will do well in the fridge. sourdough is famous for its long fermentation and health benefit. I did try overnight rise at room temperature and it works. But you can try 4 hours in RT and overnight in the fridge and see how it works
