Stinging Nettle and Lemon Cake (GF DF VG)

They are a common plant in woodlands, at least in the UK! You won’t be able to find them in stores. Just make sure to wear gloves as they can have a nasty sting!I’ve added a blog post in the recipe description which gives you some tips for how to forage for them!

Interesting recipe and what a great looking cake. I will definitely have to look up how to pick them!

It's easier than you think! Just wear gloves and snip the top 1/3 off with some secateurs or scissors, collect in a bag. Then at home, give them a rinse with cold water, and then cover them with boiling water for about 10 minutes. This softens them and removes the sting so they can be handled without gloves!
