I’m also on the hunt for new ways to use up green tomatoes. I have a huge bagful with very few ripe ones left - can I ask why using 100% green tomatoes is unhealthy?

@genlato_ green tomatoes contain Solange. which is the same alkaloid found in green skin potatoes. it's not super bad for us if eaten in moderation. but eating high amounts can lead to gastric problems. also can be more harmful to pets. I know when I raised pigs, the vet told me to stay away from feeding them this as they are way more susceptible to it than we are. there aren't many suggestions for green tomato usage. I've done salsa Verde, tomato sauce, fried green tomato to name a few. I also saw a recipe for pickled green tomato. and a suggestion to add them into a chow chow. if you aren't familiar with chow chow it is a southern dish. a pickled vegetable medley typically used as a condiment. I have used all of my green tomatoes for this year but I will be trying new things next year

Oooh this is really good to know. Thank you!! I’d like to try a salsa verde as it’s difficult to find tomatillos where I live. I haven’t tried chow chow before either, so maybe I’ll give that a go. Thanks again! Will be sure to mix the green tomatoes with other things to balance it out 👍
