Hi KathrynIt’s shown right at the beginning in step 1, preheat the oven to 180 degrees C fan and this is the temperature needed to bake them initially. These are fan oven times so if you don’t have a fan oven add +20 degrees C.Thank you for reading my recipes and my stories. Much appreciated 😊.

That’s 400 degrees F for the initial bake then 325 degrees F for the second.

Thanks very much. Don’t last 2 seconds in my house! I don’t bother using a piping nozzle and just cut the end off a disposable piping bag, hence why they look so rough and ready. I bought 100 disposable piping bags for under £4. I guess you could try using a small plastic bag or could just dollop it onto the baking sheet or could use an ice cream scoop and make profiteroles instead. Don’t need an icing bag to fill with the cream mixture. Hope this helps.

Wow your grandparents had a bakery! That’s just so amazing and the recipes that they probably handed down I’m sure are so delicious? Did you happen to inherit any of them ?

All my grandparents died before I was born. My Aunty Peg worked in the bakery and made the most melt-in-the-mouth pastry and pies. All the recipes were in her head and nothing written down sadly. Only thing I have is a photo of the bakery.
