The Champ is the perfect pairing with this — I always forget how much butter goes into proper Irish mashed potato and then remember why it tastes so good\! Timing this for tomorrow's St Patrick's Day dinner. Do you use a Dutch oven or a regular casserole dish for the braise?

I use a Dutch oven but a regular casserole would be just as good xx let me know what you think
