Now this brings back wonderful memories. We actually had a skyr producer in Yorkshire in the UK made on Hesper Farm and Sam made skyr from proper cultures from Iceland but sadly it is no more and we have to put up with ‘made in the skyr style’ which I categorically refuse to buy as it’s yoghurt!

One needs the heritage cultures to be authentic. I use my mother’s culture. She used her mother’s and she used her mother’s. All in all, our cultures go back (actually recorded) 240 years. I make two different versions of skyr. The traditional skim milk kind and another that I make with sheep’s milk. Because of cost in the US, I am forced to use powdered sheep’s milk but really tastes good-I just ferment it longer to get more tang.
