How do you make sourdough starter, and is it something that you make enough of to keep in the fridge after to use again? Or do I make it just the day I am going to make my bread. I'm knew to this if you can't tell. lol

It's something you make ahead of time and (usually) keep in the fridge. It takes a couple days to make if you start from scratch. There are tons of different ways to make the starter... I use rye sourdough and here is my recipe for it: https://cookpad.wasmer.app/uk/recipes/257426-how-to-make-rye-sourdough-starter (or look up How to Make Rye Sourdough Starter here on cookpad). Of course you can just google and more techniques too!
