This recipe looks so amazing. However is there another green leafy vegetable I can substitute for the spinach because I don't like spinach at all.

Anything will work. Arugula will give it a nice peppery flavor. Or parsley would add a lemony flavor. You could use kale, collards or mustard greens although these may require a little extra cooking time to make them tender. Or you can omit the green completely and just use mushrooms. Lots of options! Whatever you like!
