Slice the potatoes very thinly, and do the same with the onion.

Beat the eggs and set them aside.

Add the potatoes to olive oil and cook them until just before they are fully fried, or as I like to say, until they are soft.

Sauté the onion.

Place the potatoes and onion in a bowl, add the eggs, and mix everything together, lightly mashing as you go.

Heat a small skillet with a little olive oil. When hot, add the mixture and cook for about 3 minutes.

Lower the heat a bit and, using a flat plate, flip the tortilla.

Cook for another 3 to 4 minutes, depending on how well done you like it. (We prefer exactly 3 minutes so it’s set inside and crispy outside.) Remove from the pan (using the plate to help keep it together), serve, and enjoy.
