Roll out the puff pastry and spread mustard on top. Cut the pastry into 16 pieces.

Place pieces of sausage on each piece of pastry, then roll them up to form small rolls. Brush the tops with egg yolk.

Bake for about 10 minutes at 350°F (180°C) until the pastries are golden brown.
