Spinach Muffin

My mom and my wife's mom used to make a fried version of this muffin and it was delicious!
Now we do our own version, baked so it is a bit healthier :).

Steps

In a pan, in medium to low temperature, stir the spinach with a bit of oil the diced onion and garlic. Stir it until soft. Additionally season it to your taste.

In a bowl with a hand mixer, mix the egg, milk and oil, add the flour and mix it well. When it is homogeneous add the baking powder, salt and black pepper and mix it again.

In a bowl mix the spinach and the dough. Put the mix in a muffin baking tray. Bake it in a pre-heated oven at 180C for 20min.

Turn off the oven and let the muffins cool down inside it for a few minutes and it is ready!
