First you have to remove green and red part of the water melon peel. Then cut only white part in small cube type pieces.

Now boil 1 litre water then add pieces of watermelon peel in the boiling water.close the lid and Cook for 10 min(till the pieces become transparent), after this process strain water from the pieces, than boil 500 ml water +250 gm sugar,stir and make sugar water then add boiled watermelon peel's pieces in it,than cook for 10 min.

Turn off the gas then leave it for some time, add vanila essence when it is cool down,than take some bowls and divide that sugary pieces in that bowls. Add food colours in tham. Leave it 24 hr for rest.

Next day strain all coloured sugar syrup from pieces, than dry them on tissue paper or plain white cloth. Put them under fan for a night,than put them in sunlight for another 3 to for hrs. Now your candied fruits become ready to eat. Store it in airtight container.
