Steps

In a bowl, remove the sausages from their pockets

Add a tablespoon of cajun spice into the mixture and mix with your hands until mixed. You can make your own cajun spice by mixing these ingredients in powder form: paprika,garlic, onion, black pepper,white pepper, dried oregano, thyme and cayenne powder

On a lightly floured surface, roll out the puff pastry into a large rectangle and cut it into 2 to form 2 large rectangles. Roll out the sausages along the 2 rectangles and apply egg wash on one side of the pastry as shown below

Seal the pastry then Cut the pastry into small squares or as you please. Place them on a greased baking try.

Apply egg wash on each roll then make 2 cuts on top of each roll. You can sprinkle poppy seeds to garnish. This is optional.

Bake in a pre heated oven for 30 mins at 180°c. Let them cool then serve when warm or cold. You can freeze these upto 3 months and re heat on demand.
