Japanese Cheesecake 🍰

Japanese cheesecake is known for its soft, bouncy, and melt-in-your-mouth texture, so I had to try making it myself. The result is as you can see. This is my first time making Japanese cheesecake, and it turned out quite well. If anyone is interested, you can watch the video below ⬇️

Cooking Instructions

Let's prepare the ingredients first.

Set up a double boiler with a bowl over hot water. Gradually melt the heavy cream, unsalted butter, and cream cheese in the bowl, stirring continuously until smooth.

Add the fragrant vanilla extract and egg yolks (one at a time until all are added), then gradually add the cake flour.

Beat the egg whites until foamy, then gradually add the granulated sugar and cornstarch.

Add the cream of tartar and beat until soft peaks form.

Combine both mixtures until well blended, then slowly pour into the cake mold. Tap to remove air bubbles.

Before baking, place a baking tray with about 1 centimeter of hot water. Bake at 300°F (150°C) for 50 minutes. Use aluminum foil to prevent the top of the cake from browning. If anyone is interested, you can watch the video below ⬇️
