I can't make a onion bhaji as good as Indian Takeaway one's - newer Indian Chefs may make a different kind of onion bhaji from that of the original, the old chef gave several big - soft centred bhaji's - and the newer Chef makes several big - crispy whole bhaji's. Have never cooked food from India before - onion bhaji's seem easy too make,so have attempted to make them over the Years, have often bought them from the Local Indian Takeaway, the Onion Bhaji seems to be red,or either yellow,so when I make them I add either Paprika or Turmeric. Shop bought bhaji's seem to have chilli in them.

Ingredients

  • 500 gPlain Flour
  • 10Hen Eggs
  • 150 mlor 400 ml milk
  • 10 tsp.Turmeric or Paprika or Kashmiri Chillies
  • 50 gTable Salt
  • 4large Onions or 12 small Onions
  • Another 500g Plain Flour too dust

Steps

  1. 1

    Make a Pancake Batter with the Plain Flour,eggs and milk,then add the Turmeric and some salt.

    Peel and wash the onions and then chop into onion ring segments,cut down the middle and then throw plenty of these onion pieces into the Pancake Batter.

    Put the Electric Deep Fat Fryer on at the 140 mark,put 4 raw onion bhaji balls in your Electric Deep Fat Fryer and then deep fry for 5 minutes and then turn up to the 180 mark,so as to make them crispy,might take between 2 and 3 minutes - then they should be lovely and done.

I bought a small - round - Electric Deep Fat Fryer - for me and my mum in the month of August 2020 - from my Amazon Prime Membership,the small Electric Deep Fat Fryer cost about £20.00 - my mum contributed half of the money towards it.The Vegetable Oil has too be changed frequently after each 8 small bhaji's - can only deep fry 4 at a time.I don't recommend using the metal basket that it comes with - it is so small - put some Plain Flour on a Dinner Plate - put 4 Dessert Spoons of raw bhaji batter mix on the floured plate,sprinkle a teaspoon of Plain Flour over the top of each small bhaji - and then hold Dinner Plate over the Electric Deep Fat Fryer and then with the back of the Dessert Spoon - plop each small bhaji into the warm Vegetable Oil within the small Electric Deep Fat Fryer.
