🍓 Strawberry Mousse Cake

✨Celebrating my friend's birthday who loves pink, and because of my friend's request, "I want to eat the cake you make."
Cooking Instructions

👉🏻Separate the egg whites and yolks. 👉🏻Add a pinch of salt to the egg whites. Beat until foamy, then add the lemon juice and continue beating until soft peaks form. Gradually add the sugar while beating until stiff peaks form. 👉🏻Add the yolks and gently mix (use the lowest setting if using a mixer).

Sift the all-purpose flour mixed with cornstarch into the mixture (in 2-4 batches), and gently fold. 👉🏻Add the milk and unsalted butter, and mix gently. 👉🏻Pour into a mold (I used a 16 cm mold) and bake at 320°F (160°C) for 20-25 minutes.

Strawberry layer: 👉🏻Soak 2 sheets of gelatin in water until soft (10-15 minutes). 👉🏻Heat the pureed strawberries in a pot until slightly steaming. Add 60 grams of sugar and stir until dissolved. Then add the passion fruit juice and soaked gelatin. Stir until dissolved, then remove from heat and let cool. (1) 👉🏻Whip 200 grams of whipping cream until soft peaks form. (2) 👉🏻Gradually fold mixture (1) into (2) using a spatula, gently to avoid deflating the cream.

White mousse layer: 👉🏻Prepare similarly to the strawberry layer, replacing the pureed strawberries with milk and using the remaining prepared ingredients.

🍰 #Assemble_the_cake: (use a 16 cm ring mold or springform pan) 👉🏻Place a layer of sponge cake at the bottom. 👉🏻Pour the milk mousse layer, and chill in the refrigerator for about 30 minutes. 👉🏻Add the remaining strawberry mousse layer. 👉🏻Refrigerate for 6-8 hours until set.

🍰 Decoration: (I decorated before removing the mold) Crush Oreo cookies and sprinkle evenly over the cake. Decorate with topping cream, strawberries, and blueberries!
