This is a famous recipe for the southern part of Karnataka. Made with very few ingredients, is a best snack.
Steps

In a large bowl, add all-purpose flour, finely chopped chilli & finely chopped/grated ginger.

Mix all the ingredients and add sour buttermilk. Make a thick batter and let it rest for 30 minutes.

After 30 minutes, the batter will loosen a bit. Also add salt to the batter and mix well.

Heat the oil until medium hot. Check the oil by dropping a drop of batter, if it comes up immediately, then the oil is ready.

Add 1 tsp fruit salt along with 1 tsp water to the batter and mix well. Fruit salt has to be added just before frying.

Now dip your fingers in water and wet it. With wet fingers take small quantity of batter and drop it in oil. Put the batter as much as the pan can contain.

Fry on medium heat until the golibaje turns brown in colour. Goli Baje will automatically turn it's side once fried from one side.

If the oil turns too hot reduce the heat. The entire frying has to be done on medium heat only.

The golibaje will be crisp from outside and will be cotton soft from inside.

Serve with your choice of chutney.
