Ingredients

  2. 250 gramschickpea flour (besan)
  3. Salt to taste
  4. 1/2 teaspooncarom seeds (ajwain)
  5. 1/4 teaspoonbaking soda
  6. 2 teaspoonsoil
  7. 1/4 cuplukewarm water
  8. 1 teaspoonoil for kneading the dough
  9. as neededOil for frying
  10. For Instant Jalebi
  11. For Sugar Syrup
  12. 1 cupsugar
  13. 1/2 cupwater
  14. 12-15saffron strands
  15. 1/2 teaspoonlemon juice
  16. 1 droporange food color
  17. For Jalebi Batter
  18. 1 cupall-purpose flour
  19. 2 teaspoonsyogurt
  20. 1 droporange food color
  21. 1/4 teaspoonfruit salt (Eno)
  22. About 3/4 cup water
  23. as neededGhee or oil for frying

Cooking Instructions

    Sift chickpea flour, salt, and baking soda into a mixing bowl. Add carom seeds.

    In a mixer jar, mix 2 teaspoons of oil and water well. Add this to the chickpea flour and knead into a medium-tight dough like for puris. Add 1 teaspoon of oil and knead lightly. Cover and let it set for 20 minutes.

    Take a lemon-sized portion of the dough and shape it into a long roll with your hands. Place it on a wooden surface and stretch it forward with your palm. Once it forms a strip about a foot long, cut it with a knife.

    Fry in hot oil over medium heat until done. Fafda is ready.

    To make jalebi, first prepare the sugar syrup. Add sugar and water to a pan and heat. Add saffron and food color. Let it boil. Add lemon juice. Once the syrup is sticky, turn off the heat.

    For the jalebi batter, sift the all-purpose flour into a mixing bowl. Add yogurt and food color. Mix well. Gradually add water and mix to a flowing consistency. Beat in one direction for four to five minutes.

    Heat ghee. Add fruit salt to the batter and mix. Pour the batter into a squeeze bottle or piping bag and make jalebis in medium-hot oil. Fry until crispy. Soak the fried jalebis in warm syrup for 1 minute, then remove and place on a plate. Fry all jalebis this way. Serve hot.
