Firstly take large size of brinjal n poke it with fork and grease with oil so it helps to peel off the skin of brinjal easily.

Start roasting on gas stove flipping occasionally. Roast the brinjal untill turns dark n cooked completely from inside.

Cool it down and start to peel the skin out.cut the head of the brinjal n mashed it with fork.

Take a pan heat 2 tbs of oil and saute 1 tsp jeera, 1 dried red chilli n green chili, garlic,ginger paste. Saute it and add one chopped onion n little spring onion in it. Saute it till onion becomes transparent. Now add chopped tomatoes.

Cook it for 2 mins and now add coriander powder,garama masala, chili powder, salt n little fresh coriander. Saute it for 5 to 7 mins till spices turn aromatic. Now add mashed brinjal in it.

Mix and mash for 5 minutes untill all combined well.

Garnish it with some fresh coriander and serve it hot.
