Peel, wash and chop the potatoes into fries. Drain and dry them then deep fry until cooked soft.

Chop and fry the onions until golden brown, add in the garlic and ginger and cook for about 3 minutes

Add in the tomato (preferably blended) and the tomato sauce, paste, salt and the spices. Cover the pan and let it cook for about 20 minutes. If you don't blend the tomato, try as much as possible to mash the tomatoes to make the sauce smooth. Add a bit of water where necessary, but not too much.

To ensure a good sauce to fries ratio, drain the sauce into a separate cup and place the fries on the pan. Pour the sauce over the fries in small bits as you gently stir to coat the fries in the sauce. Try not to break the fries. Add in the coriander as you mix.
