Soft Matcha Cookies With White Chocolate Using Pancake Mix

I wanted to make soft cookies combining two of my favorite flavors, white chocolate and matcha.

The cookies are very soft straight out of the oven, but will harden over time. They are best if you let them cool down properly on a cake rack.
The cookies will spread and puff up as they bake, so leave space around each dough ball. Recipe by Ayuq

Ingredients

9 servings
  1. 100 gramsPancake mix
  2. 40 gramsMargarine
  3. 20 gramsHoney
  4. 1Egg yolk
  5. 1 tbspMatcha
  6. 1bar White chocolate

Cooking Instructions

    Let the margarine come to room temperature. Preheat the oven to 170°C. Chop up the white chocolate.

    Cream the margarine, add the honey and egg yolk and mix well.

  3. 3

    Sift the pancake mix and matcha into the mixture from Step 2, and blend together well.

  4. 4

    Add the white chocolate and mix in. Divide into balls. Line up the cookie dough balls on a baking sheet, and press down lightly.

    Bake for 12 minutes at 170°C. Leave to dry out for a bit and they're done.
