Apply a little oil over the brinjal and roast direct over heat, flip at intervals and roast till skin turn black. Once roasted brinjal, take out in a plate to cool. Then peel the skin and mass well.

Heat mustard oil in a kadai add cumin seeds and let them splutter and add chopped garlic, ginger, green chillies and saute few seconds then add chopped onion and fry.

Once onion fry well then add tomato and cook, now add turmeric powder,red chilli powder, coriander, cumin powder, mango powder and salt, mix it well.

Now add mashed brinjal and mix it properly well. Lastly add chopped coriander leaves and mix nicely. Then turn off the flame.

Baingan Bharta is ready.
