Lebanese fresh Zaatar (thyme leaves) and sumac salad -perfect for bbq

We always make this simple salad in Lebanon with bbq.
We use Lebanese wild thyme leaves which are a bit bigger and longer than the one you find in the UK but of course you can use either as they both have very similar taste. Or simply use oregano leaves 🍃

Usually when we say “green” zaatar, we’re referring to to the leaves. And when we say “zaatar” alone, we’re referring to the famous spices mix.

Start with slicing the onion then mix it with sumac. This will make the onion soft, wilted and slightly less tangy.

Pick, rinse and dry the thyme leaves.

Combine everything with olive oil, salt and lemon juice. Serve

Many ways to enjoy this simple salad.. with your bbq or in a cheese sandwich. You can also add white cheese to it like feta or buffalo mozzarella. 😋
