CSuper easy and crunchy hard exterior buns with a surprisingly light and chewy interior. Best served as snacks or breakfast with warm coffee or hot cocoa!

Coconut Rock Buns are like tea scones of Newfoundland and Labrador, Canada, minus the eggs. And these buns are just as easy to put together as the scones. They are called rock buns because of the rough texture. As they bake the rough edges get darker brown and they look really rustic!

Combine the dry ingredients and cut in the butter till the flour is coarse in texture. Add the raisins and the liquid ingredients. Mix to form a dough. Just scoop the dough on the baking tray and bake till golden. Do not shape the dough as you want those knobbly, rough edges so that they get extra bronzed in the oven.

Ingredients

35-40minutes
6 servings
  • 2 cupsall-purpose flour
  • 1/2 cupdesiccated coconut
  • 1/4 cupsugar
  • 1/2 cupbutter, room temperature
  • 2eggs
  • 1/2 cupmilk
  • 1/2 cupraisins
  • 1 tspvanilla essence
  • 2 tspbaking powder
  • 1/4 tspsalt
  • 1/2 tsp cinnamon

Steps

35-40minutes
  1. 1

    Preheat the oven to 350F.

  2. 2

    In a large bowl add flour, coconut, sugar, baking powder, cinnamon and salt. Whisk well.

  3. 3

    Add butter then rub it with your fingers until you get a crumbly mixture.

  4. 4

    Add the raisins and mix.

  5. 5

    Add vanilla, eggs and milk and mix until a dough is formed.

  6. 6

    Use a tablespoon or cookie scoop to scoop out the dough. Place the dough balls on a prepared baking tray. Do not shape the dough balls. They should look messy like rocks.

    Bake for 30 minutes or until golden brown.

    Remove and cool completely on wire rack.
