  • 300 gall purpose flour
  • 200 gwater (67%)
  • 60 gactive starter (15%)
  • 6 gsalt (2%)

    ⭐️Night of Day 1: Before going to bed, make the starter. Mix all the ingredients for the starter. Room temperature: 15-20 degrees.

    ☀️Morning of Day 2 : Upon waking up, check the starter. If it has expanded more than twice its original size, it's okay. It should be airy and float when dropped into water.

    ※ In summer, leaving it overnight may cause over-fermentation, so instead of leaving it overnight, check the status after about 3 hours.

    Mixing: Mix the strong flour and water. It's okay as long as there's no dry flour left. You can use rye flour or whole wheat flour for about 10% of the flour.

    Autolyse: Cover so it doesn't dry out and leave it for about an hour.

    Mix in 60g of the starter and salt. (The remaining starter is mixed with flour and refrigerated for use in the next batch)

    First Fermentation (Bulk Fermentation): Do a stretch & fold every hour for 3 hours (3 times in total) - you can look up how to do this on YouTube.

    Gradually, the gluten will start to form.

    Then, leave it for another 2-3 hours.

    Prepare a proofing basket dusted with flour (a 1:1 mix of rice flour and strong flour is recommended). Shape the dough and place it in the proofing basket.

    🌠Cold Fermentation: Put it in the fridge and leave it until the next morning. If the room temperature is below 10 degrees, you can also leave it at room temperature.

  12. 12

    ☀️Morning of the 3rd day: It's okay if the dough has doubled in volume. If it hasn't, leave it at room temperature for a while.

    Score the dough as desired.

    🔥Preheat the oven and a cast-iron pot to 230 degrees, add the bread and a small amount of water, then immediately start baking with the lid on.

    After baking for 30 minutes, remove the lid and continue baking until the crust becomes a deep golden brown (approximately another 5-15 minutes).

    🍴You'll be able to cut it neatly if you let it cool down thoroughly first.
