Cooking Instructions

Boil meat in high heat for 1-2 hours or until meat is soft. Save broth. Don't discard.

Add oil in large wok. When oil is hot, add garlic and onions. When garlic and onions is translucent add meat. Pour about half of the meat broth that you saved when you boiled the meat.

Add pepper, pickles relish, knorr chicken powder, sugar, tomato sauce, tomato paste, liver spread, soy sauce, bay leaf, garbanzo, potatoes, carrots, and bell peppers. Add more broth if desired.

Let it boil for 20-30 minutes or until potatoes and carrots are cooked. (Optional) add a few pieces of Thai Chili for added spice.

This recipe is called Beef Caldereta or Kalderetang Baka which is a beef stew from the Philippines, brought by the Spanish people during their 300-year occupation in the country. The word “caldereta” is derived from the Spanish word “caldera”, which means “cauldron”, a large cast iron pot for cooking or boiling over an open fire, with a large pot and frequently with an arc-shaped hanger. There are many variations of this recipe but commonly, it is meat stewed with potatoes, carrots, bell pepper, pickle relish, green peas, peanut butter, tomato sauce, and liver paste.
