Ingredients

  1. 1 blockextra-firm tofu
  2. 1 teaspoonolive oil
  3. 1/2 teaspoonground cumin
  4. 1/2 teaspoonground turmeric
  5. Salt and pepper to taste
  6. 4whole-grain tortillas or wraps
  7. 1 cupfresh spinach or kale, chopped
  8. 1/2 cupcherry tomatoes, halved
  9. 1/4red onion, thinly sliced
  10. 1/2avocado, sliced
  11. Fresh cilantro for garnish (optional)
  12. Salsa of your choice

Cooking Instructions

    Start by pressing the tofu to remove as much liquid as possible.

    In a bowl, crumble the tofu to resemble the texture of scrambled eggs.

    In a skillet, heat the olive oil over medium-high heat and add the crumbled tofu.

    Stir in the cumin, turmeric, salt, and pepper. Cook for 5-7 minutes until the tofu begins to brown slightly.

    Warm the tortillas in a separate pan or the oven.

    Evenly divide the seasoned tofu onto the wraps. Top with the spinach or kale, cherry tomatoes, red onion, avocado, and a spoonful of salsa.
